Butternut Squash-Bacon Pizza

Change up your ordinary pizza for this fall-themed pizza with seasonal butternut squash, considered one of the sweetest winter squashes. This has a long shelf life, making it a great ingredient for fall recipes. Skin, stem and seeds are removed before consuming; however, you can roast the seeds, which are like pumpkin seeds. Here’s your list of ingredients for this delicious fall pizza (serves four):

  • 1 pound (package) of refrigerated pizza dough
  • 1 pound butternut squash (about half a squash) cubed in ½ inch pieces
  • ¾ of an onion, sliced
  • 1 tablespoon of rosemary
  • ¼ pound of bacon sliced in ½ inch pieces
  • 2 tablespoons of balsamic vinegar
  • 3 tablespoons of olive oil
  • 4 ounces of goat cheese (can use mozzarella)
  • 2 tablespoons of Parmesan cheese
  • Salt and pepper for taste

Butternut squash pizza

Preheat oven to 400 degrees. Place cubed butternut squash on cooking sheet, coat with olive oil, salt and pepper. Roast for 20 minutes until tender.

While squash is roasting, cook bacon in medium pan over medium heat. Drain grease and set bacon aside. Add olive oil and sliced onion to pan in which bacon was cooked. Cook on low heat until onions are caramelized. Remove squash from oven and increase temperature to 450 degrees. Stretch pizza dough over baking sheet and place bacon, butternut squash, caramelized onions, goat cheese, rosemary and Parmesan on top. Bake pizza for about 15 minutes or until crust is golden. Remove pizza and drizzle balsamic on top before serving. Total time: 50 minutes
